Avocado Lime Crema

Threw this together one night when making Taco Grilled Chicken Wings. I know, the usual accompaniment for wings is blue cheese or ranch dressing, but I figured I’d stay with the Mexican theme (and I had some avocados that desperately needed to be used)

There were also Mai Tai Margaritas with this meal. All in all, a good night.

Avocado Lime Crema

Leftovers, if any, go great with chips as a dip! This recipe yields about a cup.

Ingredients

  • 2 Avocados (ripe)

  • Juice from 1.5 Limes

  • 1 Garlic Clove (skin removed. slightly crushed)

  • 1/2 Cup Sour Cream

  • 1/4 Cup Mayonaise

  • Salt and Pepper (to taste)

  • 2 TBSP Fresh Cilantro (Slightly chopped)

Process

  • Cut open avocados, remove pits and scoop flesh into a blender
  • Add remaining ingredients EXCEPT cilantro to the blender. You will add the cilantro after the blending step. If you add too soon the blender will crush the leaves. You want to be able to see the specs of cilantro.
  • Blend until smooth.
  • Add cilantro, give blender on more quick pulse.
  • Scoop crema into a bowl and garnish with a whole cilantro sprig.
  • Serve with chicken wings, chip, tacos, etc.

Notes

  • Flavor is best if it is served after 30 minutes so that flavors can meld. If storing, press a piece of plastic wrap directly onto crema to slow oxidation (that ugly gray thing that avocados do).
